I love when Fall rolls around and all things pumpkin come out! Pies, shakes, lattes, seeds and my all time favorite, Pumpkin Bars w/Cream Cheese Frosting! The cream cheese frosting gets me every time! And any cake or bar that is super moist and melts in your mouth is my go to binge eating item!
This recipe comes from a friend of a friend and has been shared around! I have tasted quite a few Pumpkin bars but nothing holds a candle to this recipe. The frosting can be made to your specific taste in such an easy way I love that it is versatile. For me a little on the sweet side for my sister in law a little on the cream cheese side.
So without further ado…
Pumpkin Bar Squares w/Cream Cheese Frosting
- 4 Eggs(beaten)
- 1 cup Vegetable Oil
- 2 cups Sugar
- 1 cup Canned Pumpkin
- 3/4 tsp Salt
- 1/2 tsp Ginger
- 2 tsp Cinnamon
- 1/4 tsp Cloves
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 2 cups Flour
- 6 TBSP Softened Butter
- 4 Ounces(5 or 6 for more cream cheese taste) Cream Cheese
- 1 TBSP Milk or Cream
- 2 1/2 cups Powdered Sugar
1. Preheat oven to 350 degrees.
2.Grease jelly roll pan( basically a cookie sheet with a lip).
3.Blend eggs, oil, sugar and canned pumpkin together.
4.Add in salt, ginger, cinnamon, cloves.
5.Blend in baking soda, baking powder and flour.
6.Pour in greased jelly roll pan.
7.Bake for 25 minutes checking with toothpick to ensure done.
8.While cake is baking mix softened butter with cream cheese and milk.
9.Slowly blend in powdered sugar(taste test to see if you want to add more cream cheese).
10.Allow cake to cool before frosting and cut into small squares.
